600 g potatoes

2 crushed garlic cloves

2 medium onions, sliced               

2 tbsp chopped fresh herbs (parsley, chives, rosemary, thyme or any of your favourite)

125 g cheddar cheese, grated                      

50 g parmesan cheese, grated                    

1 tsp oil                

400 ml vegetable stock

Preparation:

  1. Boil potatoes for about 10 minutes, drain and allow to cool a little.
  2. Preheat oven to 180C degrees. Cover oven dish with 1 tsp of oil. 
  3. Slice potatoes finely and put 1/3 to the bottom of the dish. Cover with one third of garlic, onion slices, herbs and cheddar cheese. 
  4. Place other layers the same way, pour over with hot vegetable stock and bake in oven for about 15 minutes. Sprinkle with parmesan cheese and bake another 5 minutes until cheese has melted and golden.
  5. Serve and enjoy!
